Ingredients:
2 c flour
2 tsp baking powder
1/2 tsp salt
1 c sugar
1/3 c butter, room temperature
2 eggs
2 mashed, ripe bananas
1 tsp vanilla
1 c blueberries
Directions:
Preheat oven to 350. Line muffin tin with baking cups.
Mix the butter, eggs, bananas, and vanilla until well combined.
Sift flour, baking powder, salt and sugar with wire whisk.
Add the dry ingredients to the wet ingredients.
Mix on low until just combined.
Gently fold in blueberries.
Bake for 20 minutes.

Makes 12-15 muffins.

- I also doubled the recipe without problems (and ended up with 27 muffins, which was admittedly a tad excessive, so my neighbors were thrilled).
