Banana Split Cheesecake

This is the best dessert recipe in my arsenal! It's to DIE for. Funnily, I got it from a roommate that I didn't like very much but who was a great cook.

2 c. crushed graham crackers
1/3 c. margarine, melted
1 c. sugar
3 pkgs (8 oz. each) cream cheese
1 tsp vanilla
3/4 c. eggs
1/2 c. mashed bananas
1 c. halved strawberries
1 banana, sliced, tossed w/ 1 tsp lemon juice
1 can (8 oz.) pineapple chunks, drained
Sliced almonds
3/4 - 1 c. chocolate chips


Preheat oven to 350 F.

Mix graham crackers, margarine, and 1/4 c. of the sugar. Press into bottom of a 9 x 13 pan.

Mix cream cheese, remaining 1 3/4 c. of sugar and vanilla with electric mixer until well blended. Add eggs, mix. Stir in mashed banana. Pour/spoon into the crust.

Bake for 40 minutes to an hour or more, or until the center is almost set. Cool. Refrigerate 3 hours. Top with strawberries, sliced banana, pineapple, and almonds. Melt chocolate chips and drizzle on top.

*I have since changed the proportions of the cheesecake filling back to normal. I tried it doubled (the way I originally posted it), and it didn't turn out looking or tasting like cheesecake. Now it should be perfect!
