Canneloni

This is possibly the easiest dinner ever, and it's meatless!

Ingredients:
16 oz cottage cheese
2 T butter
1 egg (even when doubling)
8 oz cream cheese
1 T basil
1/4 cup parmesan cheese
2 T chopped green onions
8-10 flour tortillas
1 jar spaghetti sauce
1 small can sliced mushrooms

Directions: 
- Grease a 13x9 pan. 
- Blend cheeses, butter, egg, parmesan cheese, and basil. 
- Spread down the center of a tortilla, then roll. 
- Place seam side down in pan. 
- Spread spaghetti sauce over the whole thing. 
- Sprinkle with canned mushrooms. 
- Bake at 350F for 25 minutes.

Tips & Tricks:
- I used low-fat cream cheese and non-fat cottage cheese, and it still tasted awesome.  Don't tell Chris.
- I also added some dried minced onion to the filling because I have a ton of it (thank you, church food storage place).  It was good.  :)
